doing the same thing right now on a 85 23 SF.its stripped down all way and new floors going in.i will keep the channels and scuppers.would like to do it without wood floors but not sure how to keep it straight with foam. FWIW I'm gonna do my 23 Sceptre I/O decks and try to keep the gutters. Here is the short version of my plan if it helps:

• cut the deck out 2" inside the edges, leaving the bottoms of the gutters as tabs on the liner,
• Pull the deck top skin
• Recore the deck outside the boat with Corecell and extend the edges out 2" with glass (finish the surfaces as much as possible while out too)
• Bond the deck back in on top of the stringers and tabs
• Fair in the edges
