Weather stripping
 
Any suggestions as to what kind of weather stripping I should use to seal the type of hatches as shown below.

Great... thanks Brian. I saw some stuff that looked like it would work when I was a Lowe's the other day but I just wanted to see if thare was anything special you guys are using.

Strick,

I used regular winter door weather stripping found at home depot. You can go to boaters world and get some but the cost is $$$$ up there. The stuff I got at HD has lasted 2 years and seals out water just fine.

Strick I knew I had this somewhere and stumbled acrossed it today. Check this link for seals.
It should give you exactly what you need for a clean custom look.
