Smoked fish
 
Anyone have a good soaking brine recipe for smoked fish. I just got a new Traeger smoker and I want to break it in with some sailfish filets I have.

Everglades season smoked with citrus wood. I don't use a brine.

I just use salt and a little black pepper.

Salt, brown sugar, pepper corns, bay leaves, essence, hot sauce & ice water. Soak over night, rinse, pat dry, put on smoker & sprinkle cayanne pepper or brown sugar depending on your taste. Try using different woods as well. I hit it hard with smoke for the 1st two hrs then back off for the next two. The brine will keep it moist but some people prefer it dry. When you're ready for a dip recipe let me know. Although most will frown upon killing a sail they are my personal favorite. Good luck & show some food porn!

Copout I think I will try yours sans the hot sauce. I did not catch the sail - a friend did and gave me a couple of fillets. I used to have a guy in Miami who would smoke a sail (or any other fish for that matter) for you for free - only he kept half of it for himself as payment.

Was that at the Blue Marlin smoke house?
I was trying to get a side business started smoking fish & making dip but it never took off the way I wanted, so I just do it for friends when needed.
