I fear asking a stupid question, but what are they???

Floorboy,
them is golden tilefish. Pretty colors, huh?
Out west our variant is called ocean whitefish and usually caught in shallower waters than back east. Very similar in habits and as table fare but not nearly as colorful. Check the frozen food section at Hy-Vee, they'll probably have something labeled as ocean whitefish. This time of year they may even have some fresh in the seafood/meat dept. Give it a whirl. Its mild but tasty. The kids will love it... Probably right next to pollack and cod. Very important fish commercially.

Will do, Thanks

Some people like to call it the "Poor mans Lobster" because of the close resemblance in texture. But very tasty!!

Copout, where did you pick those up?
