Welcome to the site and congratulations on your '75 20'. Spend some time and search though this site. You'll find pretty much everything you'll want to know on the various steps of a complete restoration of various models of SeaCrafts.
Personally, I am just finishing a complete restoration of a 23 CC, so I know what you're in for. I think the key areas will be the transom, deck, fuel tank and paint/gel coat. It's automatic that you should fully disassemble the boat to the keel, including every fastener, Find and repair rotted wood and damaged glass. I think in retrospect, if the floor is soft, removing it entirely will give you access to the stringer system and replace the floor entirely.
As many here will advise you, each task has an associated quantity of beverage required to complete it. At the end of the project, you should have enough money in returnables to pay for your new electronics.
The learnig curve is the fun part. Enjoy...
