I painted my 23 in and out with Sterling about a 1 ½ years ago still looks great. I also used the one part polyurethane Interlux in a few small arrears like inside the center consol and the insides of the hatches which were ruff as well they didn’t need such a elaborate paint job since the glass inside there was unfinished anyway. I like the stuff and it works well. I think you got a real plan for now you could get buy with just a quart and be done with it until you do the whole boat. As for the method I would uses the same method I used with a two part paint use a good foam roller ¼ “ thick maybe 4” wide and then a real good brush. I didn’t use any primer on the inside of the center consol but I would follow their recommendations about primers. Always remember 3 light coats are better than 1 thick coat. You can get buy with using a little less quality brushes on the first 2 coats and then use your best brush for the last coat. Always wet sand between your coats.
