Marine Ply sandwiched together with epoxy to the correct thickness of the existing stringers. Use a cabosil/epoxy mix to glue the stringer in place after you have them cut to shape. West systems book shows how to repair parts of existing stringers. Laminate it with a few alternating layers of 1808 or mat/18oz roving. US Composites sells a nice thin laminating epoxy resin and it's fairly inexpensive. Otherwise I like the system III 2:1 epoxy. Short nap rollers are excellent for wetting out mat and not making a mess of the fibers. Good Luck . . . It will be years before you're boating again. I still think you should find a better boat worthy of your money and time.
