I strongly considered the adjustable-tilt option when my Seastar steering system was being ordered and am happy I decided against it. I spoke with others that owned the tilt version, tried a few out, etc. For me, it was the wrong option. Others may love theirs though.
Because my boat was a complete gut-and-redo, I could put the livewell anywhere and for some of the reasons you listed I chose not to put it up front (too bouncy up there in a boat that size), not in the floor (I wanted gravity draining vs. pump out), and while I came close to getting the leaning post variety, I went with the livewell being in one of the two aft corners. It adds some weight to be sure but it isn't too bad due to my batteries being fairly far forward, my fuel tank being pushed forward, floor was raised 2.5", etc.
I recently saw a very nice leaning post livewell but can't recall who the maker was. Maybe that will be the route I choose for the next boat...
