I have same exact boat and did the same thing 2 seasons ago. I have the stock console and have engine access from a wooden access panel on the back of the console & a front seat that flips up on the front of the console. I have also cut in 2 inspection hatches on the front of the console for easier access to the top of the motor. I also had inpection hatches cut into the deck for easy access to change the plugs etc... To do any major work the T-Top does flip all the way forward for complete engine access.
