Default Transom Help....How to cut?

OK today I took off the skin on the transom. Most of the wood was not all that bad for 40 years. However where the cap was joined to the transom, it leaked over the years and is mush at the top corners.

QUESTION...When replacing the transom, how far back do I cut the stringers??? Or do I just trim enough away and then fill later on with epoxy after the new transom is in.
