Default Painting my 75 20' SF

Hey all,
I purchased my '75 last year summer and it was extemely oxidized and alot of deep scratches and quite a few gouges from the bow along the flat chines and some along the keel.
I rubbed it out and waxed her the best I could. I do not want to spend 3000 for someone to paint it. I have read alot about Roll and tip with single part poly urethane such as interlux. I want to paint the hull a little deeper blue than it is now, and have a white underside.I am in need of advice on in no particular order

1. Best material to use to fix scratches/gouges and how to finish the repaired areas

2. Best ( least dangerous, but still good quality) paint.
I know 2 parts have the best result when done right but I dont want to spray.

3. How to get the dang thing on blocks to paint it !!!!

4. Any Gotchas since this is my first try.

I have been looking at Interlux Interdeck for the deck and hatches, so that will be a good primer on the roll and tip method. Not sure about what brand for the hull and bottom

Any and all advice is greatly appreciated !!
