As far as the other two are concerned, the word "family" would make up my mind. Do you have the time to invest in the project? Because if you have to pay someone to rebuild the floor and refinish it you might be better off buying the turn key choice. Then there is the expense of re-powering the project.

Tucker, I have a Nautique ski boat and have driven inboard ski boats for many years. I dont mind them, but I am not sure how they would do in salt water. I think the maintenance would be much higher. The one I was referring to had a closed cooling system. It seems like a nice boat and the transom is already closed in. I just dont know how the tunnel hull would do down the road If I were to install a bracket and a pair of out boards.
