That will work, but not well. Been there, done that. Similar reasoning. I mounted baseplates to the console of a 25' Robalo CC, and I had to duck beneath the outriggers when they were deployed. And then I still had to hand the rod around the outrigger rigging.
I'm 6'2", and I had to duck way down to clear the poles, and forgot about the outrigger lines coming back to the gunwale anyway. After a few months, I moved the base plates to the gunwales. Console mount ended being a PITA. In 4 or 5 months, I had to fight a fish past the outriggers maybe 2 or 3 times, and I still had to duck beneath the poles, and hand the rod around the outrigger lines. FWIW.
