First, the twin 140's gave it plenty of speed, up into the mid 30's. It would even plane with one engine provided you weren't over-propped and you tilted (or "trailered") the other outdrive and used full trim tab deflection to get up on plane.

Doing the transom from the outside is easier if you're doing nothing else, and you don't have to cut the cap. If you're gonna put knees in, or rebuild motor mounts, etcetera, go ahead and cut the cap to give yourself easy access to the whole area.
