I cant imaging that big 250 on a 20sf. People put smaller engines on their 23sf's and are happy with the amount of power. I have a 130 Yamaha 2 stroke on my 20sf and I can bump 40mph with 2 guys in the boat. Cruise at 30mph all day long. 130hp is all you really need in that 20. The 130 e tec is a strong 130 and you will be more then happy with that set up.
