Consider PVC board, which is available from most building supply companies. It's cheap, very easy to work (except the dust makes a mess), can be glued (unlike starboard), and is available in all kinds of sizes, even sheets. The downside is the cut surfaces will never be as slick as the finished surfaces, even with fine sanding, but it holds paint well. Also, long unsupported pieces can flex, but so will starboard.

The material is cheap enough to justify buying a piece just to fool around.
