Default Jack Plate on Flotation Transom Bracket

Greetings!

I'm in the process of a 1969 20' SeaCraft Potter rebuild and had a question about mounting a jack plate on a flotation transom bracket. I'll be doing about a 1/3 of my time fishing in Pine Island Sound where the average depth is 2 1/2' to 5' deep. I'm planning on powering with either a 140hp or 150hp 4-Stroke. Does installing a jack plate on the bracket make sense knowing I'll be fishing in these shallow waters part of the time?

One last question...for today....within the enclosed transom I have a reasonably large amount of free form space and I'm considering a livewell in the transom. I'd love to hear your opinions on a livewell in the transom (weight considerations, bilge issues) and how large a livewell would be appropriate within this space.
