Can I use a non skid coating over the Epoxy without any drying/curing issues? I like the looks of Tuff Coat but not sure if it would dry properly over the epoxy.

the only think you would not want to use is gelcoat (polyester) as it does not like to stick to epoxy. Any other coating should be fine.
Just make sure you cover all the epoxy, so its protected from UV
