No real world experience with a SC 23 but have had both on a mono hull with carbed 2 strokes. The Rambo 27 had twin 150 and would plane out on one with WOT of 30+.
My experience is with the old school 1 gal per hr. per 10 hp and a bit more with twins, more drag in the water. The Rambo was at best a lover of the fuel at 1.4 mpg at cruising speed of 34+- at 3400. Current sled running is 21.8 with a 175 and gets 2.5 +- at cruising speed of 24-29 at 3200-3800.
You will find in my opinion that twins make maneuvering at low speed ie: docking, spinning the boat a special enjoyment also the ability to get back on one when the inevitable happens.
The 23 Tsunami that is in the SLOW works will have a single 250/300 and a kicker 9.9. This has been decided on bc of price and total range.
