Default Using fiberglass scraps?

Question for the fiberglass experts among us: A local boatbuilder has offered me some high density foam and fiberglass scraps for free. I need to recore a couple hatches, and am planning on using the foam - it's got the tiny holes in it for vacuum bagging, but I've never tried/not set up for bagging, and would probably just do a traditional layup. I did a couple test panels with light weight cloth and West epoxy that came out well. So here's the question - Because the work will be done on the underside of the hatches and out of sight, I'm wondering if there'd be much of a downside to using 1708 scraps (average size maybe 12"x24") and slightly overlapping them? What do you think?
