Default Seacraft 18 deck removal question

I am about to buy a SC 18 and I was hoping for some advice on the deck/interior liner,
I love the layout of the 18, I wouldn't change anything about it, saying this I really would like to redo the transom and remove all the old foam in the bilge and re do the core on the deck,

My thought is if I separate the interior liner/deck completely from the hull, clean, fix what i need to fix, recore and then rejoin the hull and the interior together not really cutting into any of the original components,

am i just going to end up breaking something?

Any feedback would be appreciated,
