Default 23CC Potter Repower

I am going to repower this spring and have a few questions for "the collective wisdom."

The vessel:

A 1977 23 Center Console with the original transom (25") currently fitted with twin 120hp Force.

I have located a 250hp 2002 Evinrude Direct Injection with a 25" shaft and an available 5" aftermarket extension. 0 hours since a powerhead rebuild and a good lower unit. Price $6,500.

My questions are:

Is this the right power? Too much? Too little?
I know this is after the FICHT fiasco, but do any of you have experience with this motor? The motor is owned by the local Evinrude dealer where it was rebuilt. The extension originally came with the motor, but was deinstalled as part of the rework. Do I trust the extension, or should I look for a true 30" shaft?

What else should I be asking?
