Making doors/hatches?

I want to make some new locking doors on the console of my 69 20 SF since the previous owner made the doors out of oak, which has not stood up to the salt very well. Also would like a to make an anchor locker door up front as well. I guess the simplest thing to do would be to buy some starboard and cut it to the dimensions of the current doors, but it is very expensive! Any suggestions on how to do this cheaply & properly?
