George,
This probably doesn't help a whole lot, but I think you'll be better 3+ mpg at cruising speed. If you're concerned then bring an extra jug along or buy a flow meter.

My old wellcraft v20 with a 200hp yamaha which was much much heavier than a 20ft seacraft would average 2.8 - 3.0 mpg @ 30mph : navman.
