A new gauge should come with a sensor, but you can buy additional sensor's at any NAPA store; the one I had on my old motor was just like the one on your car that screws into the water jacket, except it just had a Z-bracket that fit under a head bolt, and you just screwed sensor down till it contacted the head.

With a single gauge, 2 sensors and a switch, it would be real obvious if one head was running much different than the other if the needle moved when you switched sensors. If your impeller fails, the overheat horn will warn you of the problem quicker than a gauge will anyway. As an engineer, I love having lots of gauges, but I think the money for an extra temp gauge would be better spent on a water pressure gauge, which will tell you when your impeller needs changing!
