I cant find any pictures of it open, but feel free to PM me and I can take some when Im back at the shop. I haven't seen any other boats with this option, so maybe it was a custom job from a previous owner.

I appreciate it. That alone would probably take most of the load off of the issue, unfortunately 80's Sceptre models didn't have any other option aside from the integral fish boxes from what I believe: See below...

The boxes have a significant footprint and I couldn't possible see a scenario for needing both of them as fish boxes or even one cooler one fish box. Again, dry storage is most likely use, so elimination thereof completely may be somewhat detrimental to storage on these boats as a whole...
