Default Backing Plates and Fasteners

Is there a good place to get material to be used as backing plates for thru-bolting accessories? I assume any SS or Aluminum plate would do?

Also, I know everyone seems to use SS fasteners to fasten everything, even aluminum. Is there no worry about galvanic reactions because of the dissimilar materials?
