Default Fuel tank/ console modifications

I am in the process of restoring the family boat - a 1969 20' CC - and would appreciate any input available. My Dad for years considered moving the console forward about 4" to 6" to balance the weight of these much beloved, but stern-heavy boats. Now that i've decided to get this beauty back in shape for it's next generation on the water, I am also considering increasing the above deck fuel tank from 40 Gal. to 50 by customizing a new one(24*14*35) with 3" more height. I would therefore need to raise the console 3" as well.

New power is another neccesity - i'm figuring anywhere from a 120 to a 150, using a jack plate with the original 20" transom height and a splash plate.(thanks Generaider!)

Any ideas, thoughts, experiences and criticisms are welcome and appreciated!
