I definitely get what you mean. The 79' brochure has something very similar to what I'm asking about. The 80's Sceptres had fish boxes in those spots under the helm seats, and a runway of a cockpit....

2-3" should be good, I wouldn't go any less than that though. Leave a little extra and you can always trim it back a pinch if you like or need to.
