Sweet 23' on THT

I have a question. I am just learning the ins and outs of this boat and caution will be my first priority, but how far offshore do y'all head in your 23's?
What is the worst seas that you have come home in? How did she handle it? I have been very impressed with the ride of the boat so far, but I am a little concerned about getting caught out in the crud with her due to all I have read about the draining issues and so forth. She was modified when the transom was rebuilt and does have about 1 1/4 inch bailers about an inch above the deck that shoots straight out the back of the boat. The drain plugs in the corners have me a little worried, because if I pull one out, she seems to start filling very quickly.
