Default Repowering 23 Seavette conversion and need advice

I am in the process of a Seavette conversion to center console(blasphemy) and need help regarding repower options. Transom will now either accept a 30” shaft single or twin 25” shafts. My options that I currently have
1) twin yr 2000 carbed 200 Johnson’s
2) single yr 2004 Evinrude 250 DI.
3) use one of the 200s with 5” extension

Again, will be hung on the transom NO flotation bracket. Any help appreciated. Pros/cons etc etc. real world experience with twins etc.
