Default redoing deck in 20cc

The decks in my 20cc are soft. They were redone 7 years ago by someone that really didnt know what they were doing. THe didnt ptch or crown the decks properly for drainage. also they didnt glass or expoxy coat the underside of the plywood which lead to its rotten state.

I have restored a handful of boats and wouldnt think twice about cutting the decks out to restore.

my question is what should I rebuild the decks out of? and how thick should I make them? I was planing on doing two or three layers of glass and sealing the underside of the decking.
