My only problem now is a little bit of bow hop at certain speeds but it's not bad, I'm just picky.

If you're still having problems with porpoising at any speed, I would try those transom wedges between the motor and the Jack Plate. It's a very economical fix and I'd be very suprised if they didn't solve the problem. They'll allow you to plane at lower speeds as well. Here's an example:
