My camera has a setting it says is for the web, with a lower pixel count, would that work better when posting pic's instead of using a high resolution setting??

Always capture the best original file that you can....and then play with size and other aspects later. .....in my wee little opinion.

The only thing you need to change in terms of size from any large file is the dpi (for web 72 is the target dpi) and the overall dimensions, which are up to you. Most people have fairly decent sized screens nowadays but there are still a few that whine when anyone posts an image larger than wallet-size.

You might also consider sharpening your images after the fact, they won't have that soft/fuzzy effect then.
