You could pull the legs up and install toggle bolts in there, then you wouldn't have plates there.

You could drill an oversized hole, like 1/2" diameter. Then wax a 1/4" bolt, put a nut on it, and epoxy it into the hole. After the epoxy sets up, unscrew the bolt and you’ve got threaded epoxy and an embedded nut that you can run a machine screw into.

You may want to gouge out some of the coring so the thickened epoxy would have a wider section between the skins to help prevent pull out.

Does Daltonmarineinc mean like Dalton Marine between Acworth & Woodstock?

Several boats ago this it how I anchored the CC to the deck. The T-top was then anchored to the cc and deck with aluminum backing plates. I call it the ultimate consel set up. The cc acts as the base for the t-top and if the base is strong then nothing will pull apart. Notice the Variable degree deadrise hull

I used similar L-bracket scheme to mount my galley seat, except I used oversized thickened epoxy-filled holes in deck instead of the below-deck L-brackets. Seating area of the original Seafari deck has ~3/4" plywood core instead of 1/2" balsa core; I drilled 1/2" hole thru deck but NOT thru bottom layer of glass, and then filled with epoxy. I then drilled and tapped the epoxy for 1/4-20 machine screws, which hold better than tapping screws. Toughest test to date has been 185# guy in seat in 5-6'seas; seems solid so far.
