hey Tim, what works for me is;

1) Important step, take a shot of OUZO, relax & admire these beautiful fish!
2) Clear the deck
3) Fish facing forward and already secured with tail rope and front rope thru the gills/jaw, bleed fish under slow troll
4) Cut out gills under the plate and pull gills/guts out, watch out for Sharks!!!
5) I lean over and insert my best arm thru the gill plate up to the elbow and out the mouth. Should wear a long glove or towel to prevent arm rash.
5) Count of 3, buddy pulls on the gill/head rope while i pickup my leveraged arm in the gill plate/mouth to get the head over the gunnels.
6) Carefully guide the head/body over the gunnels, the get out of the way and get your arm back out! Many pounds of fish will be sliding onto the deck!!

7) Repeat step one

8) Repeat step one again ....

Thanks guys for the compliments as this the biggest fish landed .... so far
