Anyone running 20-footer with Hydraulic Jack Plate

I'm in the market for a 20-ft boat and considering Seacraft and Mako. Of course I want the best of both worlds, smooth ride and shallow draft, but know there is compromise. That said, how shallow will the Seacraft run with a hydraulic jack plate?
