You might look into a "Bladder Style" Tank for your fresh water hold. Easy to install in tight quarters or weird size unused space.
They will conform to the area without being custom made.
An access hatch cut into the inner liner or below deck will do the trick.

I had a 15 gal in front of the fuel tank. Perfect for quick rinse off of Reels, Dive Gear and Bathing Beauties after a swim
